Better-than-Ever Beef Enchiladas

The following recipe is from my Kraft Magazine, Food & Family. I tweaked it a little for our tastes and family size (original recipe  -http://www.kraftrecipes.com/recipes/better-than-ever-beef-enchiladas-90553.aspx). My family loved this recipe!! My husband wants me to definitely make it again!

Prep time: 20 minutes
Cook time: 20-23 minutes
Serving size: 6-8
Cost: $10 - $12

Ingredients:
1 lb. extra-lean ground beef
2cup each chopped green and red peppers
3 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided (I use any brand)
2 cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided (I use any brand)
12 Sante Fe Homestyle Whole Grain tortillas (about 6 inches)

Directions:

1. Heat oven to 400°F.
2. Brown meat with peppers in large nonstick skillet. Stir in 1 1/2 cups salsa; simmer 5 min., stirring occasionally. Remove from heat; stir in 1 cup cheese.
3. Spread 1/4 cup of the remaining salsa onto bottom of 9 x 13 inch baking dish. Stack 4 tortillas; wrap in waxed paper. Microwave on HIGH 10 sec. or just until warmed. Spoon 1/3 cup meat mixture down center of each tortilla; roll up. Place, seam-sides down, over salsa in dish. Repeat. Top with remaining salsa; cover.
4. Bake 20 min. or until heated through. Top with remaining cheese. Bake, uncovered, 2 to 3 min. or until melted.

Serve with salad and favorite dessert.

Enjoy!! If you try this recipe, please let me know how it turned out.
